100% Cabernet Franc
Our PoÉT-Nat is 100% Cabernet Franc and was harvested early to retain its acidity. For our sparkling Cab Franc, the fermentation starts in stainless steel and then is transferred into bottles to complete fermentation. This is the ancient style of making sparkling wine, sometimes called méthode ancestrale, but more often these days, merely called Pét-nat. The wine remained on the lees for a total of eight months before disgorgement to retain a delightfully sparkling personality, with just a wisp of the peppery, red fruited character of Cabernet Franc.
